White Chocolate Tower with Dark Chocolate mousse (4)
150g raspberries
200g White Chocolate
For the Mousse;
125g caster sugar
2 egg whites
250g dark chocolate
150 ml double cream
For the mousse start by dissolving the caster sugar in 60 ml of water and simmer for 5 minutes till thicker and syrupy.
Whisk the egg whites then with the machine still running slowly add the sugar syrup. Continue to whisk till cool then fridge.
Melt the dark chocolate, whip the cream and add both to the egg white mixture. Leave to set in the fridge.
Melt the white chocolate and spread on baking parchment. Allow to set then cut discs out dipping the cutter in hot water first.
To assemble start with white chocolate base then pipe some dark chocolate mousse. Add a few raspberries and repeat with the chocolate disc and mousse ending with a few raspberries.
This can be assembled an hour or two before eating and placed in the fridge.
